Caribou Pho “Nice Pho What”

  • 6 cups water
  • Caribou bones/meat
  • 6 cups beef broth
  • 1 whole onion (cut in half ), roast at 400 degrees for 15 mins
  • Spices (fry on medium heat on a stovetop for 2 mins)
  • 2 T fennel
  • 2 T coriander
  • 1 T black peppercorns
  • 1 T cloves
  • 2 cinnamon sticks
  • Boil on low for six hours. For the last hour, turn to medium (add green onions). Strain broth.

Toppings

  • Green onion
  • Jalapeno
  • Red Onion
  • Thinly sliced Caribou (add broth over the caribou; it will cook the meat)
